Pero mientras que comer mucho embutido se asocia con mayor peso y tasa de obesidad, el consumo de pescado se vincula con una menor concentraci\u00f3n de glucosa y un menor riesgo de diabetes.<\/a><\/h2>\n<\/p>\n<p><P>Fuente: Noticiasdelaciencia.com (10 Nov 2011)<\/P><\/p>\n<p style=\"text-align: justify;\"><strong>\u201cEn los pa\u00edses mediterr\u00e1neos, el consumo de alimentos caracter\u00edsticos de su dieta ha disminuido en las \u00faltimas d\u00e9cadas para aumentar el de grasas saturadas, procedentes sobre todo de carnes rojas y boller\u00eda industrial. Esto es realmente preocupante\u201d, explica a SINC Mercedes Sotos Prieto<\/strong>, autora principal de un trabajo incluido dentro del estudio Predimed (Prevenci\u00f3n con Dieta Mediterr\u00e1nea) e investigadora de la Universidad de Valencia.<\/p>\n<p style=\"text-align: justify;\">El objetivo de este an\u00e1lisis, realizado en la Comunidad Valenciana a 945 personas (340 hombres y 605 mujeres) entre 55 y 80 a\u00f1os y con alto riesgo cardiovascular, fue conocer el patr\u00f3n de consumo de carne y pescado, sus correlaciones con la adherencia a la dieta mediterr\u00e1nea y su asociaci\u00f3n con factores de riesgo cardiovascular.<\/p>\n<p style=\"text-align: justify;\"><big><strong><a title=\"Ozono21 SALUD y BIENESTAR\" href=\"https:\/\/www.ozono21.com\/sectores-pagina\/empresariales\/salud-bienestar-belleza\/7\/\" target=\"_blank\" rel=\"noopener noreferrer\">Los resultados, publicados en la revista Nutrici\u00f3n Hospitalaria, muestran que esta poblaci\u00f3n mediterr\u00e1nea presenta una ingesta elevada de carne roja y de pescado, pero mientras que el consumo de pescado se asocia con una menor prevalencia de diabetes y menor concentraci\u00f3n de glucosa, el de carne roja, en particular de embutidos, se relaciona con mayor peso y prevalencia de obesidad.<\/a><\/strong><\/big><\/p>\n<p style=\"text-align: justify;\">\u201cEl consumo de carne roja en esta poblaci\u00f3n alcanza una media de una vez al d\u00eda y resulta elevado en comparaci\u00f3n con las recomendaciones alimentarias\u201d, apunta la investigadora. \u201cEsto podr\u00eda estar influenciado por las recomendaciones sobre consumir ternera a la plancha en muchas dietas para perder peso\u201d.<\/p>\n<p style=\"text-align: justify;\"><big><strong><a title=\"Ozono21 ALIMENTOS\" href=\"https:\/\/www.ozono21.com\/sectores-pagina\/empresariales\/galerias-alimentacion\/4\/\" target=\"_blank\" rel=\"noopener noreferrer\">Comer carne roja en exceso se relaciona con mayor riesgo cardiovascular, elevaci\u00f3n de la presi\u00f3n arterial, diabetes y un moderado incremento de mortalidad total. Por el contrario, el pescado est\u00e1 incluido en la dieta mediterr\u00e1nea y tiene efectos cardiosaludables.<\/a><\/strong><\/big><\/p>\n<p style=\"text-align: justify;\">Los autores afirman que, a pesar de tratarse de un estudio transversal, que no determina una relaci\u00f3n causal, son varios los trabajos que coinciden en que <strong>el consumo de pescado, tanto el blanco como, en mayor grado, el azul, se asocia con un menor riesgo de diabetes tipo 2.<\/strong><\/p>\n<p style=\"text-align: justify;\">\u201cSe han sugerido varias hip\u00f3tesis que explican por qu\u00e9 el consumo de pescado podr\u00eda estar relacionado con el riesgo de diabetes\u201d, indican. <strong>\u201cEl aumento de los omega 3 en las c\u00e9lulas del m\u00fasculo esquel\u00e9tico mejora la sensibilidad a la insulina\u201d.<\/strong><\/p>\n<p style=\"text-align: justify;\">\u201cResulta importante conocer el patr\u00f3n diet\u00e9tico de la poblaci\u00f3n espa\u00f1ola para saber si los h\u00e1bitos est\u00e1n cambiando y por tanto, debemos reforzar la educaci\u00f3n alimentaria\u201d, subraya Mercedes Sotos Prieto. \u201cHabr\u00eda que instaurar programas de intervenci\u00f3n diet\u00e9tica para evitar alejarse del patr\u00f3n tradicional mediterr\u00e1neo, es decir, disminuir el consumo de carne roja y mantener el de pescado\u201d.<\/p>\n<p style=\"text-align: justify;\">El consumo elevado de grasas saturadas procedentes de la ingesta de carne roja y embutidos (7,4 +\/- 4,7 veces por semana) fue mayor en el caso de los hombres. Las mujeres demostraron comer m\u00e1s carne blanca, en particular pavo y pollo.<\/p>\n<p style=\"text-align: justify;\">En relaci\u00f3n al consumo de pescado (4,5 +\/- 2,6 veces por semana), no se encuentran diferencias significativas de g\u00e9nero. En general, las mujeres presentaron una mayor puntuaci\u00f3n para \u201cpatrones diet\u00e9ticos sanos\u201d o \u201cdietas prudentes\u201d en relaci\u00f3n con los hombres. (Fuente.
