Todas ellas ten\u00edan entre un 5 y un 15% de grasa. Todas ellas fueron congeladas y se descongelaron en el momento del cocinado. Tambi\u00e9n fueron contaminadas artificalmente con una cepa de Salmonella y otra de E. coli. Los serotipos utilizados fueron S. typhimurium, S. Newport y S. Montevideo en el caso de la Salmonella mientras que para STEC se utilizaron o157, H7, O154 y O26.<\/H2><\/p>\n<p style=\"text-align: justify;\"><strong>Los investigadores estudiaron los efectos de cocinar las hamburguesas ya fueran a la parrilla o en el horno sobre la destrucci\u00f3n de Salmonella y de E. coli.<\/strong> En el caso de las asadas en parrilla, han mostrado que voltear las hamburguesas tres veces y descongelarlas previamente al cocinado permite menos riesgos. Adem\u00e1s la eficacia del cocinado es mayor en aquellas hamburguesas con un 5% de grasa. Por otro lado, la evoluci\u00f3n de la temperatura en las hamburguesas grandes compradas directamente a carniceros fue m\u00e1s r\u00e1pido en las asadas. En el caso de las que fueron horneadas no hubo diferencias significativas aunque la destrucci\u00f3n de bacterias fue m\u00e1s eficaz en aquellas que ten\u00edan un 15% de grasa.<\/p>\n<p style=\"text-align: justify;\">Seg\u00fan el modelo bacteriano hecho a partir de los datos el punto de cocci\u00f3n \u00abpoco hecho\u00bb permite una reducci\u00f3n de entre 0,2 y 1,3 log ufc\/g de Salmonella y STEC en hamburguesas de carne de vacuno. En el caso de las hamburguesas \u00aben su punto\u00bb, la reducci\u00f3n se cifra en 2 y 2,9 log ufc\/g.
