Tras 4, 7 y 11 d\u00edas de refrigeraci\u00f3n, se midi\u00f3 el efecto del aceite natural sobre la oxidaci\u00f3n lip\u00eddica y sobre el sabor de la carne. <strong>La oxidaci\u00f3n lip\u00eddica se vio significativamente disminuida al tiempo que se observ\u00f3 un menor detrimento del color.<\/strong> Por el contrario, el uso de aceite de or\u00e9gano aument\u00f3 la percepci\u00f3n del mal sabor considerablemente; pruebas de test demostraron una menor aceptaci\u00f3n de la carne que incorporaba el conservante natural.<\/p>\n<p style=\"text-align: justify;\"><big><strong><a title=\"Ozono21 C\u00e1rnicas\" href=\"https:\/\/www.ozono21.com\/sectores-pagina\/industriales\/carnicas\/21\/\" target=\"_blank\" rel=\"noopener noreferrer\">El grupo de expertos indic\u00f3 la necesidad de futuras investigaciones para evitar la aparici\u00f3n del mal sabor y conseguir la aceptaci\u00f3n de los consumidores.<\/a><\/strong><\/big><\/p>\n<p style=\"text-align: justify;\">Por otra parte, <strong>investigadores de la Universidad de Sao Paulo y Campinas (Brasil) y de la Universidad de Massachusetts (Estados Unidos)<\/strong>, estudiaron el efecto de los carotenoides naturales en la mejora de la vida \u00fatil de las salchichas refrigeradas. Para ello, formularon seis tipos de salchichas con diversos conservantes, con eritorbato de sodio, norbixina, licopeno, zeaxantina, \u03b2-caroteno y dextrosa, con una concentraci\u00f3n de 0.05 gramos por 100 gramos de carne.<\/p>\n<p style=\"text-align: justify;\">Tras 45 d\u00edas de refrigeraci\u00f3n a una temperatura de 4\u00baC, se midi\u00f3 la estabilidad oxidativa mediante la cuantificaci\u00f3n s\u00e9rica de malondialdeh\u00eddo. Encontraron que los conservantes m\u00e1s efectivos eran la norbixina y la zeaxantina, dos carotenoides naturales.<strong> Los investigadores se\u00f1alan que los posibles motivos de la mejor eficiencia de los conservantes naturales son las polaridades intermedias de los carotenoides y su localizaci\u00f3n en la interfaz de las emulsiones <\/strong>(lugar en el que se produce la oxidaci\u00f3n lip\u00eddica por m\u00e1s tiempo).<\/p>\n<p style=\"text-align: justify;\"><big><strong><a title=\"Ozono21 C\u00e1rnicas\" href=\"https:\/\/www.ozono21.com\/sectores-pagina\/industriales\/carnicas\/21\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span>El equipo de investigadores concluye que son necesarias futuras investigaciones acerca del efecto de estos pigmentos sobre la estabilidad sensorial de los productos c\u00e1rnicos.<\/a><\/strong><\/big><\/p>\n<p style=\"text-align: justify;\"><big><strong><a title=\"Generadores de Ozono21.
