Cuatro de ellas fueron alimentadas con una dieta convencional (concentrados + paja) mientras que las otras cuatro fueron suplementadas con una dieta enriquecida en \u00e1cidos omega 3 (mezcla convencional + linaza y colza extruidos).<\/p>\n<p style=\"text-align: justify;\">A las 24 horas del sacrificio se cogi\u00f3 la carne seleccionada y se envas\u00f3 al vac\u00edo durante 11 d\u00edas a una temperatura de 4\u00baC. <big><strong><a title=\"Generadores de Ozono21. SALUD de las personas y se puede UTILIZAR en el Hogar, Oficinas, Restaurantes, Hoteles, Hospitales e Industria\" href=\"https:\/\/www.ozono21.com\/productos-ozono\" target=\"_blank\" rel=\"noopener noreferrer\">La carne fue cocinada aplicando un chorro de vapor de tres formas distintas:<\/a><\/strong><\/big> dos de ellas aplicaban una temperatura superficial de la carne a 65 y 96 \u00baC durante 300 segundos y un tercero aplic\u00f3 la temperatura hasta 207\u00baC durante 300 segundos.<\/P><\/p>\n<p style=\"text-align: justify;\">Para determinar la oxidaci\u00f3n de las prote\u00ednas se utiliz\u00f3 la medici\u00f3n de los niveles de carbonilos, amino\u00e1cidos arom\u00e1ticos y tioles libres. Tambi\u00e9n se evalu\u00f3 la formaci\u00f3n de bases de Schiff.<\/p>\n<p style=\"text-align: justify;\"><big><strong><a title=\"Ozono21 Alimentos y Cocina\" href=\"https:\/\/www.ozono21.com\/sectores-pagina\/domesticos\/alimentos-cocina\/30\/\" target=\"_blank\" rel=\"noopener noreferrer\">A ra\u00edz de los resultados, los investigadores han visto que las altas temperaturas de cocinado tienen un impacto directo en la oxidaci\u00f3n de las prote\u00ednas.
