Al hacerlo los cient\u00edficos han comprobado que los desechos de laurel y eucalipto cambian los atributos sensoriales de las setas.<\/p>\n<p style=\"text-align: justify;\">Como apenas existe informaci\u00f3n sobre la evaluaci\u00f3n sensorial de hongos comestibles, el equipo organiz\u00f3 a un panel de expertos para determinar y <strong>comparar los atributos de dos especies: Pleurutus ostreatus<\/strong>, la segunda seta m\u00e1s cultivada y consumida en el mundo, <strong>y Polyporus tenuiculus,<\/strong> un hongo silvestre comestible que potencialmente se podr\u00eda producir con fines comerciales.<\/p>\n<p style=\"text-align: justify;\">Por primera vez este grupo de expertos ha confirmado que, aunque se cultiven en los sustratos habituales, estas dos especies se diferencian \u201cclaramente\u201d por sus atributos sensoriales. <strong>Los expertos percibieron que Polyporus tenuiculus tiene valores superiores en la intensidad del sabor \u201ccereal\u201d, color, dureza, fibrosidad, y gomosidad respecto a Pleurutus ostreatus. \u00c9sta \u00faltima presenta un sabor \u00e1cido y una sensaci\u00f3n picante \u00fanicos\u201d, seg\u00fan los cient\u00edficos.<\/strong><\/p>\n<p style=\"text-align: justify;\">Los investigadores cultivaron las setas en sustratos generados con los restos que quedan tras extraer los aceites esenciales del laurel y el eucalipto, adem\u00e1s de emplear residuos agr\u00edcolas (paja de trigo).<\/p>\n<p style=\"text-align: justify;\"><strong>El residuo de laurel fue el mejor, ya que no s\u00f3lo el cultivo tuvo buenos rendimientos, sino que produjo hongos de mejor calidad, seg\u00fan confirm\u00f3 el panel de expertos. <\/strong><\/p>\n<p style=\"text-align: justify;\">Los \u201cjueces expertos\u201d dictaminaron que en las setas cultivadas con eucalipto y laurel se incrementa la intensidad del color marr\u00f3n, el gusto \u00e1cido, el sabor caracter\u00edstico a \u201chongo\u201d y la gomosidad, aunque percibieron una menor intensidad del gusto amargo y de la dureza.<\/p>\n<p style=\"text-align: justify;\"><strong>El estudio se realiz\u00f3 en el Instituto de Investigaciones
