El ozono encuentra aqu\u00ed las condiciones m\u00e1s \u00f3ptimas para su actuaci\u00f3n, destruyendo los microorganismos paralizados por el fr\u00edo\"   href=\"https:\/\/www.ozono21.com\/sectores\/industriales\/carnicas\/21\/\" rel=\"noopener noreferrer\">El JAMON serrano es uno de los productos m\u00e1s caracter\u00edsticos de la gastronom\u00eda espa\u00f1ola, y est\u00e1 presente en muchos de nuestros platos y comidas. Este producto se presenta en el mercado con certificaciones de calidad muy distintas, dependiendo del proceso de elaboraci\u00f3n que se siga.<\/a><\/strong><\/H2><\/p>\n<p style=\"text-align: justify;\">Uno de los jamones m\u00e1s reconocidos es el JAMON con Denominaci\u00f3n de Origen de Teruel, caracter\u00edstico por el cuidado de todos los factores influyentes en el proceso de elaboraci\u00f3n, que consta de 4 fases. En las dos \u00faltimas fases tienen lugar <BIG><strong><a target=\"_blank\"  title=\"Ozono para C\u00e1rnicas. El ozono encuentra aqu\u00ed las condiciones m\u00e1s \u00f3ptimas para su actuaci\u00f3n, destruyendo los microorganismos paralizados por el fr\u00edo\"   href=\"https:\/\/www.ozono21.com\/sectores\/industriales\/carnicas\/21\/\" rel=\"noopener noreferrer\">procesos bioqu\u00edmicos: lipol\u00edticos, oxidativos y proteol\u00edticos, que desarrollan ciertas especies de hongos presentes de manera natural en el JAMON. Estos procesos determinar\u00e1n el aroma, textura y sabor del producto final.<\/a><\/strong><\/big><\/p>\n<p style=\"text-align: justify;\">Dos empresas de productoras de JAMON curado, situadas en Mora de Rubielos y en la Puebla de Valverde, en colaboraci\u00f3n con el Instituto de Dise\u00f1o, Innovaci\u00f3n y Tecnolog\u00eda de la Universidad CEU, <strong>han llevado a cabo un estudio de investigaci\u00f3n con el objetivo de identificar qu\u00e9 especies de hongos participan m\u00e1s activamente en el proceso, y secuenciar su genoma.<\/strong><\/P><\/p>\n<p style=\"text-align: justify;\">Para llevar a cabo el experimento se han utilizado muestras de JAMON en las distintas fases de elaboraci\u00f3n y muestras de <strong>ambiente de las c\u00e1maras de secado y envejecimiento donde se procesa el JAMON.<\/strong> Para la identificaci\u00f3n de los hongos se han empleado t\u00e9cnicas moleculares avanzadas (PCR), que permiten identificar las especies en tan solo unas horas.<\/p>\n<p style=\"text-align: justify;\"><big><strong><a title=\"Generadores Ozono21. La desinfecci\u00f3n del generador de OZONO Turbo21, se puede utilizar en: hospitales, salas, edificios industriales, granjas, etc. La actividad del OZONO se basa en descomponer y hacer desaparecer el moho, bacterias, levaduras, virus, etc. sin dejar residuos; OZONO se convierte en OXIGENO\" href=\"https:\/\/www.ozono21.com\/productos-ozono\" target=\"_blank\" rel=\"noopener noreferrer\">La identificaci\u00f3n de especies permitir\u00e1 la inoculaci\u00f3n de los hongos m\u00e1s beneficiosos para el proceso de elaboraci\u00f3n en la superficie del JAMON, y esto a su vez permitir\u00e1 ejercer un control m\u00e1s riguroso de cada una las fases de elaboraci\u00f3n y obtener as\u00ed un producto final de mayor calidad. <\/a><\/strong><\/BIG><\/p>\n<p style=\"text-align: justify;\">Adem\u00e1s la continuaci\u00f3n de este estudio pretende abarcar la identificaci\u00f3n de las funciones que desempe\u00f1a cada especie durante el proceso.<\/p>\n<p style=\"text-align: justify;\">De esta forma muchas empresas del sector, que han mostrado ya su inter\u00e9s en aplicar estos avances a su producci\u00f3n, podr\u00e1n <BIG><strong><a target=\"_blank\"  title=\"Ozono para C\u00e1rnicas.
