Primero,<\/strong> por su alto valor a\u00f1adido y m\u00faltiples aplicaciones; <strong>y segundo,<\/strong> por la sencillez del proceso de producci\u00f3n. El caparaz\u00f3n del cangrejo contiene cantidades importantes, casi el 10% de materia seca, de quitina. La quitina es un polisac\u00e1rido que se encuentra distribuido en la naturaleza y es el segundo pol\u00edmero m\u00e1s abundante despu\u00e9s de la celulosa. <\/p>\n<p style=\"text-align: justify;\">Se usa como agente floculante para tratamiento de agua, como agente para curar heridas, como espesante y estabilizador en alimentos y medicamentos, como resina intercambiadora de iones, entre otras aplicaciones. <\/p>\n<p style=\"text-align: justify;\"><strong>Sin embargo, es muy insoluble en agua y en disolventes org\u00e1nicos, lo que en la pr\u00e1ctica supone muchas veces limitaciones insalvables, sobre todo en investigaci\u00f3n biom\u00e9dica. La hidr\u00f3lisis alcalina de la quitina conduce al quitosano, m\u00e1s soluble en sistemas acuosos, biocompatible y no t\u00f3xico. <\/strong><\/p>\n<table border=\"3\" cellspacing=\"0\"
