La buena noticia es que el agua ozonizada los mata y elimina a todos, sin dejar residuos\"   href=\"https:\/\/www.ozono21.com\/sectores\/domesticos\/alimentos-cocina\/30\/\" rel=\"noopener noreferrer\">Una tesis defendida en la Facultad de Ciencias de la Universidad de Navarra propone el uso de microondas en el procesado de conservas vegetales. Esta tecnolog\u00eda, que sustituir\u00eda al escaldado tradicional, ahorra energ\u00eda y agua, reduce los vertidos y mantiene las caracter\u00edsticas de la materia prima, seg\u00fan mantiene su autor, el qu\u00edmico Luis Ruiz de Ojeda.<\/a><\/strong><\/H2><\/p>\n<p style=\"text-align: justify;\">El trabajo ten\u00eda como objetivo estudiar una tecnolog\u00eda limpia emergente, <strong>el escaldado con microondas,<\/strong> que sustituyera al escaldado tradicional en el procesamiento de acelga, alcachofa, borraja, cardo y jud\u00eda verde. El escaldado tradicional, muy utilizado en la elaboraci\u00f3n de conservas vegetales, consume gran cantidad de energ\u00eda y recurso h\u00eddrico, adem\u00e1s de generar grandes vol\u00famenes de vertidos, explica el investigador. <big><strong><a title=\"Generador de OZONO para el AGUA Vitale21. Mediante este generador de Ozono para AGUA, Innumerables VENTAJAS del OZONO en el Agua, para combatir enfermedades, contagio e infecciones.\" href=\"https:\/\/www.ozono21.com\/producto\/generador-ozono-vitale21\/27\/\" target=\"_blank\" rel=\"noopener noreferrer\">Sin embargo, el escaldado con microondas es una tecnolog\u00eda limpia que presenta interesantes ventajas para su posible instalaci\u00f3n en la industria agroalimentaria, apunta.<\/strong> Esta t\u00e9cnica permite obtener materia prima con sus propiedades f\u00edsicas estables, con las caracter\u00edsticas de textura y colores similares a la que se obtendr\u00edan con un escaldado convencional y con una mejor retenci\u00f3n de nutrientes, <strong>detalla Ruiz de Ojeda.<\/a><\/strong><\/big><\/p>\n<p style=\"text-align: justify;\">El trabajo consisti\u00f3 en el estudio del efecto del tiempo y la potencia de tratamiento, as\u00ed como de la carga de operaci\u00f3n sobre la temperatura, p\u00e9rdida de peso, reducci\u00f3n de tama\u00f1o, actividad enzim\u00e1tica, textura, color y \u00e1cido asc\u00f3rbico (vitamina C). <strong>Los resultados concluyeron que con esta t\u00e9cnica<\/strong> las verduras experimentan un aumento de temperatura, p\u00e9rdida de peso e inactivaci\u00f3n enzim\u00e1tica proporcionales a la intensidad del tratamiento. Las dimensiones de la materia prima mostraron una fuerte reducci\u00f3n inicial, pero no se apreciaron variaciones significativas en tiempos de operaci\u00f3n prolongados. Tambi\u00e9n se comprob\u00f3 que en condiciones suaves los vegetales sufren un leve aumento en la firmeza de sus tejidos, aunque conforme el tratamiento se hace m\u00e1s prolongado las verduras se ablandan de forma progresiva.<\/p>\n<p style=\"text-align: justify;\">Mediante el escaldado con microondas se puede obtener jud\u00eda verde, alcachofa, cardo y borraja con la maquinaria enzim\u00e1tica inactiva y con las caracter\u00edsticas de textura y color similares a las del producto obtenido en la actualidad en una empresa conservera, destaca el investigador. <strong>\u00abPara las condiciones \u00f3ptimas de escaldado, la retenci\u00f3n de \u00e1cido asc\u00f3rbico es similar e incluso superior, y la p\u00e9rdida de peso es razonable desde el punto de vista de la rentabilidad.
