Adem\u00e1s, seg\u00fan el estudio, los elaborados c\u00e1rnicos que contaban con estos ingredientes a base de guisantes ten\u00edan una mayor aceptaci\u00f3n que los que conten\u00edan la grasa habitual.<\/a><\/strong><\/H2><\/P><\/p>\n<p>Fuente: eurocarne.com (08\/09\/2009)<\/p>\n<p style=\"text-align: justify;\"><strong>La reducci\u00f3n de la grasa en los productos c\u00e1rnicos es algo detr\u00e1s de lo que est\u00e1 buena parte de la industria c\u00e1rnica.<\/strong> Seg\u00fan <strong>Zeb Pietrasik,<\/strong> uno de los investigadores, \u201clos resultados de este estudio indican que con una adecuada formulaci\u00f3n se pueden elaborar productos en los que se ha reducido el contenido de grasa, mejorando la textura y las caracter\u00edsticas de procesado a trav\u00e9s de la combinaci\u00f3n de ingredientes\u201d.<\/P><\/p>\n<p style=\"text-align: justify;\"><strong>Para el estudio, prepararon seis tipos distintos de salchichas:<\/strong> una con alto contenido en grasa (22% seg\u00fan la receta tradicional), otra con el 10% adem\u00e1s de otras cuatro de bajo contenido en grasa a las que se a\u00f1adi\u00f3 harina de guisantes, almid\u00f3n, fibra y harina de trigo, a niveles del 4%.<\/P><\/p>\n<p style=\"text-align: justify;\">En <strong>comparaci\u00f3n con la formulaci\u00f3n tradicional,<\/strong> las salchichas bajas en grasa fueron m\u00e1s blandas, ligeras y el\u00e1sticas. Sin embargo, las que ten\u00edan ingredientes a base de guisantes, a excepci\u00f3n de la harina de guisantes, <strong>mejoraron sus caracter\u00edsticas de textura a los niveles que tienen las salchichas con un contenido normal de grasa. <\/strong><\/P><\/p>\n<p style=\"text-align: justify;\"><strong>Apenas si se registraron diferencias de color en las salchichas bajas en grasa y tras ser probadas por un panel de 74 personas, la aceptabilidad fue similar a las de contenido normal en grasa.<\/strong> El 81% se mostr\u00f3 dispuesto a comprar las salchichas que conten\u00edan ingredientes a base de guisantes.<\/P><\/p>\n<p style=\"text-align: justify;\">Por tanto, seg\u00fan los investigadores, los ingredientes a base de guisantes pueden ser utilizados tal como se viene utilizando la harina de trigo en este tipo de salchichas, con peque\u00f1os cambios en su funcionalidad, pero sin afectar a la aceptabilidad del producto final.<\/p>\n<table border=\"3\"
