justify;\"><strong>As\u00ed lo ha demostrado el equipo dirigido por la investigadora de la Universidad de La Rioja Elena Gonz\u00e1lez Fandos, que ha publicado los resultados de su investigaci\u00f3n en la revista International Journal of Food Science and Technology.<\/strong><\/p>\n<p style=\"text-align: justify;\">En una conferencia de prensa en Logro\u00f1o, junto al vicerrector de Investigaci\u00f3n, <strong>Gonz\u00e1lez Fandos<\/strong> ha explicado que el estudio muestra la eficacia del ACIDO CITRICO para la mejor conservaci\u00f3n de la carne de pollo y como medida adicional de seguridad alimentaria. <strong>Ha recordado que es uno de los compuestos que la Uni\u00f3n Europea podr\u00eda autorizar para la descontaminaci\u00f3n de canales de aves.<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>Aunque la Uni\u00f3n Europea no permite el lavado de carnes de ave con ning\u00fan producto antimicrobiano, se est\u00e1 estudiando la autorizaci\u00f3n de algunos, como podr\u00eda ser el ACIDO CITRICO.<\/strong><\/p>\n<p style=\"text-align: justify;\">Seg\u00fan el estudio, el lavado del producto reci\u00e9n obtenido del matadero con soluciones de ACIDO CITRICO a bajas concentraciones, entre el 1 y el 2%, <strong>consigue reducir de forma significativa la presencia de la bacteria causante de la listeriosis.<\/strong> Este pat\u00f3geno, ha explicado la investigadora, se distribuye de forma amplia por la naturaleza, incluidos los alimentos, sin que sea peligroso hasta que alcanza cierta concentraci\u00f3n.<\/p>\n<p style=\"text-align: justify;\"><strong>El ACIDO CITRICO, aunque no destruye totalmente la bacteria, s\u00ed que reduce fuertemente su presencia.<\/strong> Adem\u00e1s de su acci\u00f3n antimicrobiana, prolonga la conservaci\u00f3n del pollo en buenas condiciones entre dos y tres d\u00edas m\u00e1s de lo habitual sin envasar y hasta 8 d\u00edas almacenado a 4\u00ba en atm\u00f3sfera modificada y la calidad sensorial del producto ( olor, color, textura, sabor) no se ve afectada.<\/p>\n<p style=\"text-align: justify;\">Este aumento en la vida \u00fatil de la carne de ave, ha informado, se debe a
