El producto se almacen\u00f3 a 15\u00b0C durante 9 d\u00edas seguidos y 6 d\u00edas a 20\u00b0 C. Se midieron diariamente el \u00edndice de respiraci\u00f3n y de transpiraci\u00f3n. El recuento microbiano de la superficie se evalu\u00f3 por standar plate toatl coliform counts. El color de la piel externa y la pulpa se valoraron por la claridad, chroma y hue. La entereza, solidez, pH titratbles acidit tambi\u00e9n se midieron durante el almacenamiento.<\/p>\n<p style=\"text-align: justify;\"><strong><a title=\"Generadores de OZONO21\" href=\"https:\/\/www.ozono21.com\/productos-ozono\" target=\"_blank\" rel=\"noopener noreferrer\">La comparaci\u00f3n entre tomates lavados con agua y con OZONO disuelto, indic\u00f3 que la reducci\u00f3n de microbios era mayor cuando el OZONO estaba presente.<\/A><\/strong><\/big><\/p>\n<p style=\"text-align: justify;\">Los tomates lavados en OZONO presentaron mayor perdida de peso tanto para los tomates Saladette como de mesa.<\/p>\n<p style=\"text-align: justify;\">El \u00edndice de respiraci\u00f3n y firmeza no se vieron afectados.<\/p>\n<p style=\"text-align: justify;\">El OZONO caus\u00f3 el oscurecimiento de la superficie de la piel de los tomates Saladette pero no en los tomates de mesa.<\/p>\n<p style=\"text-align: justify;\">El OZONO tambi\u00e9n alter\u00f3 el pH de los tomates Saladette.<\/p>\n<p style=\"text-align: justify;\">Para la reducci\u00f3n de microbios aer\u00f3bicos con OZONO el tiempo de contacto fue mayor a 5 min-mg\/L.<\/p>\n<p style=\"text-align: justify;\">Se recomienda la evaluaci\u00f3n de los efectos del OZONO en contactos menores de 5 min-mg\/L.<\/p>\n<p style=\"text-align: justify;\">Las diferencias entre los tomates Saladette y de mesa pueden estar relacionados con la oxidaci\u00f3n de la superficie de la piel por el OZONO y por el ratio \u00e1rea \/ volumen.<\/p>\n<p style=\"text-align: justify;\"><big><strong><a title=\"Ozono en el  Lavado de TOMATES\" href=\"https:\/\/www.ozono21.com\/actualidad-interna\/lavado-desinfeccion-vegetales-traves-generadores-ozono\/172\/\" target=\"_blank\" rel=\"noopener noreferrer\">Los m\u00e9todos de contacto directo para el lavado de productos pueden estar limitados por la temperatura.
