La superficie en cuesti\u00f3n bien puede ser una plancha el\u00e9ctrica o de gas, o una sart\u00e9n antiadherente.<\/a><\/h2>\n<p><\/P><\/p>\n<p style=\"text-align: justify;\">En general, el pescado no precisa apenas aceite ya que, al cocinarse a una temperatura elevada, se produce una coagulaci\u00f3n r\u00e1pida de las prote\u00ednas de su carne que evita la salida de agua y otros nutrientes.<\/P><\/p>\n<p>Fuente: consumer (4 de febrero de 2009)<\/p>\n<p style=\"text-align: justify;\">Adem\u00e1s, al no ser una t\u00e9cnica que requiera incorporar grasa o aceite, es muy adecuada para la confecci\u00f3n de platos pobres en grasas y bajos en calor\u00edas. Pescados hechos en plancha quedan muy bien en filetes y rodajas de todo tipo de pescados y es la t\u00e9cnica m\u00e1s indicada para aquellos m\u00e1s grasos.<\/P><\/p>\n<p><big><strong>A la parrilla<\/strong><\/big><\/p>\n<p style=\"text-align: justify;\"><strong>Como no requiere incorporar apenas grasa o aceite, esta t\u00e9cnica es muy adecuada para confeccionar platos bajos en calor\u00edas<\/strong><\/P><\/p>\n<p style=\"text-align: justify;\">Si optamos por preparar el pescado a la parrilla, en este caso el alimento se cocina a una temperatura elevada sobre una parrilla colocada a cierta distancia del foco de calor. El pescado adquiere un sabor y una consistencia agradables, empap\u00e1ndose del aroma del humo de las brasas.<\/P><\/p>\n<p style=\"text-align: justify;\">La pieza en crudo se puede untar con un poco de aceite, pero no conviene a\u00f1adir grasa a la superficie de cocci\u00f3n. El aceite untado facilita que se forme una corteza o costra superficial en el alimento que evita la salida de jugos, por lo que quedar\u00e1 m\u00e1s sabroso.<\/P><\/p>\n<p><big><strong>Realzar el sabor<\/strong><\/big><\/p>\n<p style=\"text-align: justify;\"><strong>Para poder complementar el sabor de los Pescados hechos en plancha,<\/strong> tanto para los m\u00e1s grasos, como bonito, at\u00fan, salm\u00f3n y chicharro, como para los que tienen menor cantidad de grasa (besugo, merluza y bacalao, entre otros) podemos elaborar un ali\u00f1o consistente en una mezcla triturada de ajo, aceite de oliva, un elemento \u00e1cido (puede ser vino blanco, vinagre, zumo de lim\u00f3n, zumo de pomelo o, incluso, zumo de naranja sanguina), perejil, sal y una pizca de piment\u00f3n.<\/P><\/p>\n<p style=\"text-align: justify;\"><strong>Todos estos ingredientes <\/strong>los trituramos con la batidora hasta conseguir un aderezo cremoso con el que podemos embadurnar los Pescados hechos en plancha cuando los ponemos sobre la plancha. De esta manera, se fija el sabor a la superficie y, cuando comienza a dorarse, se incrusta el sabor y aroma del ali\u00f1o.<\/P><\/p>\n<p style=\"text-align: justify;\"><strong>Si las rodajas o piezas que vamos a cocinar Pescados hechos en plancha son gruesas podemos dejar que se marinen durante unas dos horas con el ali\u00f1o, guard\u00e1ndolo en la nevera y en un recipiente cerrado, de manera que su aroma penetre en la parte interior de la carne.<\/strong> La gracia de este tipo de ali\u00f1o es que con una f\u00f3rmula base podemos variar mucho su sabor y aroma s\u00f3lo cambiando el tipo de elemento \u00e1cido que utilicemos. Por ejemplo, podemos dar un toque m\u00e1s seco agregando vino blanco, un sabor m\u00e1s \u00e1cido utilizando zumo de lim\u00f3n, o una aroma m\u00e1s dulce agregando zumo de pomelo o de naranja.<\/P><\/p>\n<p><big><strong>M\u00c1S ALI\u00d1OS<\/strong><\/big><\/p>\n<p style=\"text-align: justify;\"><strong>Para sazonar Pescados hechos en plancha tambi\u00e9n podemos utilizar diferentes tipos<\/strong> de vinagre (de vino, de manzana, de jerez, bals\u00e1mico, de frambuesa&#8230;) o aromatizado con distintas hierbas, como puede ser con un toque de tomillo, de albahaca o de estrag\u00f3n.
