{"id":189,"date":"2009-04-19T22:14:00","date_gmt":"2009-04-19T20:14:00","guid":{"rendered":"https:\/\/www.ozono21.com\/blog\/189\/sin-categoria\/microcapsulas-para-perfumar-alimentos\/"},"modified":"2026-01-30T12:34:09","modified_gmt":"2026-01-30T10:34:09","slug":"microcapsulas-para-perfumar-alimentos","status":"publish","type":"post","link":"https:\/\/www.ozono21.com\/blog\/alimentos\/microcapsulas-para-perfumar-alimentos\/","title":{"rendered":"MICROCAPSULAS para perfumar alimentos"},"content":{"rendered":"<p style=\"text-align: justify;\">\n<h2 style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" style=\"margin: 20px 0px 20px 10px; cursor: hand; border: 0px;\"    title=\"MICROCAPSULAS para perfumar alimentos\"  class=\"alignright\" src=\"https:\/\/3.bp.blogspot.com\/_IBPlVqONz58\/SeuICYzEiQI\/AAAAAAAAA4A\/vmdax8bu4xw\/s320\/aperitivo_4.jpg\" border=\"0\" alt=\"  MICROCAPSULAS para perfumar alimentos \" width=\"191\" height=\"292\" \/>MICROCAPSULAS para perfumar alimentos<\/p>\n<p><a title=\"Ozono para FRUTAS Y VERDURAS\" href=\"https:\/\/www.ozono21.com\/sectores-pagina\/empresariales\/frutas-verduras\/11\/\" target=\"_blank\" rel=\"noopener noreferrer\">Sabrosas carnes con aroma de bosque, verduras impregnadas de un suave olor a trufas negras o pescados con un toque de esencia arom\u00e1tica de aceite de romero. \u00c9stos son s\u00f3lo algunos de los platos que se pueden cocinar con unas nuevas MICROCAPSULAS para  perfumar alimentos, que han sido desarrolladas desde los laboratorios del Instituto de Ingenier\u00eda de Alimentos para el Desarrollo (IIAD) de la Universidad Polit\u00e9cnica de Valencia, en colaboraci\u00f3n con el restaurante La Sucursal.<\/a><\/h2>\n<\/p>\n<p>Fuente: UPV (17\/11\/2008)<\/p>\n<p style=\"text-align: justify;\"><strong>Por ejemplo, en un champi\u00f1\u00f3n,<\/strong> m\u00e1s del 50% es aire y esto favorece mucho que se le pueda inyectar la microc\u00e1psula. <strong>Las carnes y pescados<\/strong> tienen una porosidad menor, y a\u00fan as\u00ed tambi\u00e9n se consiguen cambios, aunque con menor intensidad de la que se obtiene en una <strong>verdura.<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>El aroma es un cuerpo vol\u00e1til y si no se microencapsula puede llegar a degradarse, entre otras causas, por el efecto del ox\u00edgeno o de la luz.<\/strong>Tambi\u00e9n puede ocurrir que se libere muy r\u00e1pidamente y, por tanto, que no se note en el alimento.<\/p>\n<p style=\"text-align: justify;\"><strong>As\u00ed, con las c\u00e1psulas que se han desarrollado desde el IIAD es posible estabilizar estos aromas y, por tanto, potenciar los olores y sabores de los alimentos Seg\u00fan explica el investigador del IIAD y profesor de la ETSI Agr\u00f3nomos, Javier Mart\u00ednez Monz\u00f3,<\/strong> esta t\u00e9cnica de microencapsulaci\u00f3n permite proteger y aumentar la intensidad de sabor de los alimentos, manteniendo el aroma incluso durante la cocci\u00f3n del alimento. <\/p>\n<p style=\"text-align: justify;\">Las MICROCAPSULAS se impregnan mediante t\u00e9cnicas de vac\u00edo en el interior del alimento. <strong>Mart\u00ednez Monz\u00f3 se\u00f1ala que es<\/strong> \u201ccomo si al alimento en cuesti\u00f3n le pusi\u00e9ramos una inyecci\u00f3n de aroma\u201d. La esencia ocupar\u00eda los poros del alimento, y se impregnar\u00eda en su estructura. \u201cImaginemos un champi\u00f1\u00f3n, que tiene un sabor bastante neutro y queremos potenci\u00e1rselo con un aroma-sabor de trufa negra. La encapsulaci\u00f3n del aroma de trufa y su impregnaci\u00f3n en el producto potenciar\u00e1 el aroma al champi\u00f1\u00f3n y, por ende, tambi\u00e9n el sabor\u201d, explica Mart\u00ednez Monz\u00f3.<\/p>\n<p style=\"text-align: justify;\">As\u00ed, las microesferas de ciclodextrina permitir\u00e1n mantener con gran fiabilidad el aroma. \u201cLa idea es proteger el aroma para que se libere en el momento del consumo. Asimismo, si pensamos en un consumo a m\u00e1s largo plazo, logramos que la liberaci\u00f3n sea m\u00e1s ralentizada y, por tanto, que el aroma se mantenga m\u00e1s tiempo\u201d, concluye Javier Mart\u00ednez Monz\u00f3.<\/p>\n<p style=\"text-align: justify;\"><big> <strong><a title=\"Ozono21 FRUTAS Y VERDURAS\" href=\"https:\/\/www.ozono21.com\/sectores-pagina\/empresariales\/frutas-verduras\/11\/\" target=\"_blank\" rel=\"noopener noreferrer\">La investigadora del IIAD, Purificaci\u00f3n Garc\u00eda, y Jorge Bret\u00f3n, del Restaurante La Sucursal, mostrar\u00e1n a los asistentes al X Congreso Lo Mejor de la Gastronom\u00eda el desarrollo de esta t\u00e9cnica durante la sesi\u00f3n dedicada a Ciencia y cocina.<\/a><\/strong><\/big><\/p>\n<p style=\"text-align: justify;\">Los resultados de este trabajo de investigaci\u00f3n se podr\u00e1n degustar en el X Congreso Lo mejor de la Gastronom\u00eda, que se celebrar\u00e1 en el Palacio Kursaal de San Sebasti\u00e1n entre el 24 y el 27 de noviembre.<\/p>\n<p style=\"text-align: justify;\"><strong>Las MICROCAPSULAS desarrolladas por los cient\u00edficos del IIAD est\u00e1n hechas con una sustancia llamada ciclodextrina y se pueden aplicar a cualquier alimento.<\/strong><\/p>\n<p style=\"text-align: justify;\">Lo fundamental es que su estructura sea porosa.
